Sunshine Sweet Corn, Avocado, and Tomato Salad

about 4 servings

2 large ears of sunshine sweet corn, kernels removed

1 large avocado, peeled and cut into eight slices

2 large tomatoes, sliced into four wedges each

2 tbs of extra virgin olive oil

2 tbs fresh lemon juice

2 large basil leaves, shredded

*salt and pepper to taste


Arrange avocado and tomato wedges on a platter; sprinkle corn on top. Drizzle olive oil and lemon juice, and garnish with shredded basil.  Add salt and pepper to taste and enjoy!
